Pumpkins in the Park, plus the winning recipe for pumpkin pie

Not even the rain could keep families away from the third annual Civic Hospital Neighbourhood Association’s Pumpkins in the Park event at Fairmont Park on October 19.

Children enjoyed an obstacle course – which was new this year – three-legged races, squash bowling, face painting, crafting, a costume parade, a bouncy house and sampling all of the entries in the annual pumpkin pie baking contest.

Amanda Farris, CHNA president and chief organizer behind Pumpkins in the Park was pleased to see that the weather didn’t deter area residents from coming out for a few hours of fun. She noted the importance of community events such as this one.

“It’s all about bringing the community together,” says Farris.  “We’ve had a great time today.”

The winners of the pumpkin pie baking contest were as follows:

#1 Dr. Linda Robinson
#2 Olivia Roberts
#3 Corey Goss

All three winners received a gift package provided by Lil Krstic along with a gift card to Pampered Chef. The first prize winner also received an engraved pie server “2013 Best Pie.”

The judges were Andrew Hickey from Councilor Katherine Hobb’s office, Emily Perrin (last year’s pie winner), and Lil Krstic from Pampered Chef.

Dr. Robinson has graciously shared her winning recipe with KT!

Dr. Linda’s Pumpkin Pie

1 can pumpkin puree
1 can condensed milk
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp allspice
1/2 cup brown sugar

2 egg whites, beaten

  1. Beat all the ingredients together and pour into prepared pie shells.
  2. Cook the pie at 425F for 15 minutes, then reduce to 350F for 15 minutes.
  3. Make the meringue by beating the egg whites until they form stiff peaks. Gradually add 1/2 cup of sugar.
  4. Take pie out and drop the meringue by the spoonful onto the pie. Bake for another 15 minutes.
